Flounder is seasoned with a mixture or warm spices and broiled and then added to warmed corn tortillas. Topped with avocado crema and a fresh but spicy mango salsa, and served with a black bean and corn salad that has been sprinkled with cotja cheese.

To serve: reheat the fish. Place the corn tortillas a few at a time on a hot dry pan and let warm and get a little color then flip and do the same on the other side. Place a few tablespoons of the fish on the tortillas, add mango salsa, and then finish with a dollop of the avocado cream. Serve with the black bean salad on the side.
