Lean ground turkey is mixed with zucchini, feta, fresh herbs, garlic etc to form a tasty greek meatball. Couscous is cooked in a light chicken stock and finished with lemon zest, flat leaf parsley and pistachios. Cucumbers, tomatoes and sweet onion are combined with mint, oregano and parsley and lightly tossed with red wine vinegar and olive oil and then finished with a sprinkle of feta and a few olives. Greek yogurt, yeast, flour etc are combined and left to rise until ready to roll and cook to a golden puffy brown.
To serve- reheat the meatballs and couscous in the microwave. just stir to toss the salad, and place the Naan on a pan sprayed with a little olive oil and let reheat on both sides. sprinkle with a little salt and enjoy with the meatballs.
