A colorful medley of vegetables are sautéed and added to some browned garlic chicken pieces. A sauce of Mirin, rice wine vinegar, fresh ginger, and stock is cooked and tossed with the chicken and veggies for a satisfying asian meal. Served on top of rice that has been cooked and then sautéed in a little olive oil with eggs, carrots, peas, edamame, and sesame seeds to make a healthier version of fried rice.

To serve: Just reheat the rice and the stir fry in the microwave and enjoy!
