Fresh zucchini halves are filled with a mixture of turkey, black beans, corn, tomatoes and lots of cumin then topped with a sprinkle of Mexican cheese blend. Two halves per serving. Bake 400 for approx 30 minutes covered with foil. Serve with the refreshing cucumber and watermelon salad that is dotted with jalapeños, cilantro and black olives. The Salad has zero points so eat up!!
