5 ounce filet of salmon baked with fresh lemon zest, cracked pepper and olive oil. Served on a bed of creamy cauliflower “mashed potatoes” and a generous portion of slender green beans finished with balsamic vinegar.

Directions

Preheat oven to 400. place the salmon filets in a shallow sided baking dish. While the salmon is baking for approximately 12 minutes or until desired doneness, microwave the   cauliflower until hot and then the green beans until warmed. Add the cauliflower to the plate ( 1 cup) and then place the salmon on the top for a prettier presentation. Go crazy with the beans, they are free!!!
