Plumb and juicy chicken breasts are cubed and marinated overnight in lemon juice, olive oil, garlic and greek seasoning and then skewered along with peppers, onions, and squash and grilled. Long grain rice is polished in olive oil along with onion and garlic and then simmered in broth and finished with lemon zest and fresh parsley. A simple salad of English cucumber, cherry tomatoes, black olive and feta cheese are all marinated with fresh herbs to complete the meal.
To reheat: The chicken and veggies as well as the rice can be easily reheated in the microwave until warm. serve with the the salad on the side. Enjoy!!
