Long Grain rice is polished in oil with garlic until toasted and then Tomato sauce, cumin and cilantro are added along with chicken stock to cook together to make the base of the ACP. Red and yellow pepper, sweet onion, and sliced chicken breasts are sautéed with cumin, chili, garlic etc to create flavorful topping of the rice. Warm up the queso and drizzle on top of the rice and chicken. Serve the roasted corn, tomato, red onion, avocado, cilantro and lime salad either on top or on the side and enjoy!
I did not cut up the avocado as it tends to brown to chop and add to the salad before serving. Rice can be reheated in the microwave, chicken, pepper and onions can be added to a pan to rewarm or just microwaved if easier!
