Boneless skinless chicken thighs are sautéed with garlic, carrots and fresh sage and then finished in a dijon, apricot, sage sauce. Serve with a size of zero point crispy kale!! Colorful and delicious.
Directions: just heat and serve the chicken and carrots in the microwave. place 3/4 cup carrots on a plate and top with a chicken thigh and spoon over sauce. Kale is just to be enjoyed like potato chips. No need to do a thing to the kale.
