This meal is great room temperature or warm. Perfect for lunch or light dinner. Chicken breasts are sliced and marinated in curry, soy sauce, fresh ginger and garlic and then grilled to perfection. Add them to a bed of rice noodles that have been tossed in Peanut sauce. Serve fresh and crispy Thai basil marinated cucumbers as a side.
Each serving is 4 ounces of Chicken, 1 cup of Rice Noodles and 2 Tablespoons of Peanut Sauce. There will be plenty of cucumber salad to enjoy and best part is they are zero points!
