Century Farm ground beef is browned with onion, peppers, chili powder, garlic, tomatoes, paprika and cumin. The beef once all cooked is added to small flour tortillas and grated cheese and then rolled up and added to a baking pan. Homemade enchilada sauce is made with tomato sauce, chipotle in adobo sauce, cumin, garlic, and almond milk. The enchiladas are assembled and covered in the sauce and extra cheese. The salad is made with fresh steamed corn on the cob, black beans, celery, red pepper, and red onion and dressed with fresh lime juice, cilantro and honey.

To heat: preheat the oven to 375 and cook uncovered for approx 20 minutes until hot and bubbling. Serve with the corn salad on the side.
