All the flavors of Thai food (Garlic, Turmeric, soy, curry powder, ginger and honey) are added to create the marinade for the chicken tenderloins, which are then grilled to perfection and served with a peanut sauce made from coconut milk, peanut sauce, soy, ginger, sambal etc. Basmati rice cooked in chicken stock and dusted with raw cashew pieces make the perfect accompaniment to the chicken. For a cooling side dish, cucumbers are peeled cored and marinated in apple cider vinegar, turmeric, dill, peppercorns etc and finished with a chiffonade of fresh mint.
