Century Farm Pork is slow cooked in carnitas spices such as cumin, oregano, chili powder until fall of the bone cooked and juicy. Fresh lime juice, honey, cumin, red pepper and garlic is tossed with plain greek yogurt and fresh Cilantro and a cabbage mix to create a crispy light and flavorful slaw. Rice is cooked in chicken stock, tomato sauce, cumin, chili and garlic.
To serve: Place the pork on a sheet pan with the juices and broil and until warmed through and slightly crispy. Warm the tortillas on a dry pan. Heat the rice in the microwave until hot. Fill a tortilla with some pork and top with the creamy coleslaw. Serve the rice on the side.
