Buckwheat and Lentils simmer until tender in vegetable stock and then sautéed garlic, fancy pants mushrooms and onion are added along with fresh spinach to add flavor and depth to the dish. all of this is then combined with parmesan cheese; topped with roasted cauliflower and gluten free breadcrumbs and then baked until bubbly and delicious. Bake 400F for approximately 20 minutes until hot. serve along side a farmers market salad of cucumber and tomatoes marinated in a red wine, lemon, fresh herb and olive oil dressing.
